I wanted to throw out some other things that can help you cook food to reduce
the fat, etc in your life.

We just got a spray bottle for olive oil. I use olive oil for everything 
except cakes for which I use soy oil. This gives you a fine spray for
greasing things, which replaces PAM and similar sprays.

Timers. I love electronic timers because they are so precise. Not that cooking
usually needs split second timing, but it's there if you want it. The best
timer we own is Kitchen Aid. It takes an AA battery and you set the time
with hour and minute buttons. It does not have a seconds setting.

The worst is also a Kitchen Aid, it looks like a bigger version of the other
one but it takes a D battery and is set by turning the top of it. You have to
set hours, wait for it to change, set minutes and wait again for it to change
to set seconds.

I like mechanical timers, but they tend to break easily.

A wok. Almost all of my meat frying is done in a cheap regular wok. I
wash it, although that is not recommended. When I use it, I rinse it
out, let it heat on the stove and add some olive oil. Then I cook what I
want. Note that I don't deep fry anything.

For dairy (I keep them separate for religous reasons), I use a small teflon
pan, one of the few I have ever owned that really is non stick.

I use it for small meals, sauted vegetables, fried eggs, pancakes, etc.
