Not a direct answer to your question, but almost all tracks can be rented out if you're willing to pay.  Down here in Homestead you can get the Homestead-Miami Speedway for under $4k a day.  Once you're there, go nuts (within reason) as you'll be the only one on the track.. They do charge greens fees however if you have many of course excursions.

I use Chin Motorsports and recommend them highly for what i would consider "casual" track days (meaning no racing).  Not sure if they have events in your area but it's worth a look.
