This is all very much dependant on how many machines you run and 
where you want to run them.

Myself, I tend to run 95% of my machines in one room and that has 
never changed. So my cable is only run to specific places that need 
it (behind the TV for my DVR, to the telephone on the side table, and 
to the access point in the center of the house), and the rest of my 
needs are serviced by 802.11g.

Consider using Cat5 (well, Cat6 you wanted) to connect up your 
phones. That way you can exchange a data drop for a tel drop and vice 
versa easily. You can also split out more phone lines if you like, 
and moving over to VoIP phones (my current project) is a snap.
