You can choose CDE or Java Desktop when you log in with the graphical
logon. That's what I use, it's really nice. Just ignore the deprecation
warning and click the check box and you won't receive any warnings again.

What about using a Sun Ray? I never had one but wouldn't that be better than
trying to fit a graphics card and a keyboard and USB to the server itself?
That might give you a nice workstation.
