The best way is to find an video adapter that have the drivers bundled with 
the OS media.

I was able to install Solaris7/x86 with CIRRUS LOGIC, S3, MATROX, ELSA 
graphic adapters and it worked fine.
Check the documentation at Solaris x86 web ring and http://docs.sun.com
for x86 compatibility issues

About the monitor,there is no problem to install a combination that is 
supported by yours. Check the monitor performances as described in its User 
Manual and write down the combinations supported (ex.: 1024 x 768 x 72Hz). 
Then use the best fit provided by Solaris Installation Menu.
