Yeah, due to space constraints my smoker is one of those that's been
described by Smoky Hale as a 'hot plate in a garbage can'.  OTOH, if
you toss the book that came with it and get some _decent_ docs,
it can turn out a helluva good chunk of beef.  I haven't had the
nads to try a brisket, but it may be time :-)  Worst that can happen
is it gets ground up and tossed in with chorizo and peppers for chili.
If it's still tough after 12 hours in the smoker, it won't be after
simmering 12 more in the crockpot.  Now if I had room, I'd have
one of Dave Klose's beautiful creations.  Those seriously rock!
