If you don't load too many synths or instruments at the same time you 
can do some work on a iMac. My friend does all his music on a G3-500Mhz 
and it works pretty well (unless he puts too much layers over each other).

Then there is also Ableton Live http://www.ableton.com/
It's a kick ass audio app that allows you to do a lot of stuff.
