Fedora core 4 has a server option. 

Look at the PublicIP zone CD. It's designed for free WiFi hot spots, but
wired connections work too.  You can plug it into your network and use
Ubuntu live for the students. Give them all little USB keys to keep their
private files. 

The Zone CD can be set up to prevent the users on the "zone" side from
accessing the computers on the other side.

It is a live CD, with a floppy or USB key to keep some config files. 

If you make most of the teachers use a live CD too, you could cut it down
to almost no administration and no hard drives. 

You could even get a bunch of cheap USB keys, have the school's logo stamped
on them and sell them in the bookstore to raise money.

Good server option. Not good for OS9 and older Macs if they have them due
to a (hopefully fixed by now) lack of driver for Netatalk.
