As someone pointed out on this list a while ago, CF to PATA adapters don't
contain any bridge chips, they're just physical adapters from one
connector type to another.  With the appropriate CF card, no reason why
this wouldn't work.

There are a bunch of CF cards that support UDMA, and most manufacturers
will say whether they do or not (if there's no mention of UDMA in the
specs, it probably doesn't support it).  Most of Transcend's CF cards do
for instance.
