Well, firstly it didn't cost us that much (educational discount).
Secondly it isn't the only task on the server. Thirdly it has to cope
with widely varying loads ... far more than a normal mail server would
have to cope with.

It isn't underutilised. 

I personally prefer larger servers running multiple tasks ...
preferably isolated using Solaris zones, Xen domains, BSD jails,
whatever although decently put together applications work well together
(just don't try combining 'Orrible stuff on one server without zones).
