I'd imagine that a suitable answer would be to make a "hat" for the
servers, like this (sorry for the ascii art):

Where "I---------------I" is the plexiglass top, and the top has a rim
that goes around the side (only an inch or so tall). Any liquid that
falls on the top ("I---------------I") will simply run off the side of
the server top and drip straight down, avoiding the case (Since the
liquid will drip from a point that is not lined up with the side of the
case, it will not "run" down the side)...
