Two possible problems with keeping coffee in the freezer I've read about:

1. Unless really well double bagged or sealed, there's a chance the coffee
will pick up whatever freezer smells and moisture are there (seafood, etc.)

2. Freezing breaks down the oils in the coffee and causes previously
frozen coffee to have less flavor than coffee that wasn't frozen (more
noticable in dark roasts I've read).
