Then why don't you look at Dell's quad-core offering?

They offer the same basic setup as the Apple Pro for about the same
price.

However, the Dell is better in some ways: Wider range of CPUs, faster
CPUs (3.2GHz 4MB cache dual-core Xeon 2s), better video options, and
they use SAS controllers so you have the option of SAS or SATA drives.

Both are based on Intel reference motherboards at this point, so I doubt
there is much difference there.

That's the real kicker... with Apple now in the PC market, they have
lost a lot of their hardware allure.

I would love to be able to build my own Mac OS X machine, or get a
really nice PC workstation to run it.

For example, imagine MacOS X running on an 8-way Opteron with Infiniband
for motherboard I/O.
