At the Postfix/MTA level:
	"valid sender domain" checking (does it have an A or MX record?)
	RBL checking

I'm doing (at the scanner level):
	ClamAV antivirus
	SpamAssassin spam scanning (v3.0pre2)

At the delivery-agent level:
	de-MIMEing (for the mailing lists)
	SpamAssassin scanning (my personalized settings, for stuff that
			       makes it through amavisd)

Right now the ClamAV + SA is mostly a test for a setup I'm going to 
implement in the next few days at work.
