Plastic carboys can be used but glass are vastly preferred.  Most water 
dispensers use plastic so I'm assuming that's what you have.  The 
plastic carboys scratch up easily when you're cleaning them making it 
increasingly more difficult to properly clean & sanitize as meticulously 
as is necessary for brewing purposes.  Glass vessels are much easier to 
maintain and avoid oops's with.
