   Well it doesn't matter what the compiler is running *on*...only what 
it's told to generate code for.  Heck, I frequently run GCC on an 
UltraSPARC and tell it to generate binaries for a 68K.

   I've not messed with GCC on an UltraSPARC for quite a while (I 
ditched it in codegen frustration in preference to Sun's compilers), 
but if memory serves, a GCC built for an UltraSPARC target can generate 
either 32- or 64-bit binaries.  I'm not 100% positive of this, but I 
believe that's the case.
