Hardware firewall in front of the box, filtering on the box, and 
intrusion detection on the box.  Sounds like a lot of work, but it's 
nothing compared to the cleanup after getting rooted.

Of course, it goes without saying, that you pulled that system aren't 
actually leaving it on the 'Net.  Right?  :)
