We use tar.

That's for stuff that actually gets written to tape.  Everything
gets backed up to disk on a backup server, Important stuff
also gets copied to tape from there.  Periodically tapes
are sent off site (literally in case a plane lands on the building).
We are almost directly under a flight path for the airport
across the street.

Backing up to disk first is very fast, and makes finding files/restores
just as fast.
