You're not going to find such a course.

You can get training from Sun on the operating system (Solaris Admin 1 & 2,
Networking), but you're not going to get anything that will cover any situation
you run into with a Sun box.  My best suggestion is to take the introductory
Solaris courses (or just read a lot of books, such as the Syngress Media 
Solaris 8 certification study book just published, that I wrote chapter 5 
in.. *plug plug* *grin*), then just fiddle around with Sun boxes at home, and
break things - then figure out how to fix them.

The best training for Sun hardware is to have your own.
