we use Red Hat Enterprise Linux at work.
there are free (unencumbered with the redhat logo packages) version such as
centos.
RHEL updates patches can be run from cron and is configurable (we manually
update the kernel during outages but everything else automaticall.)

fedora would also be good but more stuff to install for a server.

rhel and fedora are both made for gui maintenance.
the gui works well and has a few limitations.
a windows guy can setup up RHEL--they loved the point-clicky things.
 most of my admin is with CLI.
