Transcoding from composite to component should only take on the order of
a few nanoseconds at the most.  Component cables shouldn't make any
latency difference if the signal on the cables is still SD. SD vs. HD
may be a different matter, but on most consoles, the games aren't
required to support HD and games that don't support HD will leave you
stuck regardless of cable choice.
