U-SCSI-3 is what?  U160?  U320?

The 7880 is probably F-UW (80 mb/s?), and the 2940UW would give you
40 mb/s?.  For best performance, you'll obviously want the matching
controller for those drives, so you'll want the Adaptec 29160 or maybe
the 29320, depending on what is meant by UltraSCSI-3.
