The USB->SCSI converters I've seen (From Adaptec and Iomega) don't do
multiple LUNs, so things like jukeboxes and changers tend to be out of
the question.

That's prolly what I would do, hook it up to a *nix box of some sort,
then use distmp3 to let as many boxes as I can hook up handle the
wav/pcm->mp3 part.
