[geeks] Spam Assassin set up

Ok, I have a host who has a Spam Assassin option, but they are not
familiar with any way to configure it on a per account basis or per
domain basis instead of the per server basis they currently use. Does
anyone know if there is a way? Has anyone done this before? 

I want to have it send all mail it marks as Spam to me, but with a
changed subject line, while they have it setup so that I only get the
breakdown of the reason it deleted the message, and the message is
lost. Any help would be useful. The
server(http://themistest.hmdns.net/index.php) it is on uses some
variation of RedHat(I think 6.2).
