Those people are baristas in title alone.

I mean someone who *really* knows how to make a cup of coffee; who has
been trained to do so, and has been doing it for years and for a
customer base that can appreciate it. 

Knowing how to load grounds and press the "Brew" button does not make
you a barista. Just as knowing how to install Solaris does not make you
and administrator. It's an experience/skill thing...
