I asked exactly the same question the other day on comp.sys.sun.admin.
Although the Elite3D is the more expensive framebuffer, the Creator3D does
have some advantages. For instance, the resolution of the Elite is lower -

You will notice the Elite3D wins most of them, but I think the one it looses
(Xmark93) is 2D.
The framebuffer FAQ at

says "The problem is that as with the ZX, the Elite is geared towards
high-end applications. It's not a frame buffer for the casual user; in most
cases I would prefer the Creator 3D running at 1600x1200 in 24 bit mode."
I'm in the position of having an Ultra 60 and an Ultra 30. The U30 will be
sold and the U60 kept, but I don't know what framebuffer to sell. Having
tried the two for 3D use, I can detect no difference. Both are very fast on
my U60 and my monitor does not allow above 1280x1024. I think I'll keep the
Elite3D-m3, since I might get a 3D application that can make more use of it,
but are not sure.
If anyone else has some comments, I'd like to know of them.
