Should be able to. When you allocate multiple disks for bootdisk(s),
just simply select a 2nd disk on the installation GUI and span your /var
+ /opt over the 2nd drive. That's all. /etc/vfstab will automatically
put in the correct controller and target numbers for /var and /opt.
