Our Nokia appliances (BSD+FW1 on x86) are headless - obviously.  You use a
console cable, or you use SSH to get into the box.  There's no reason why a
Sun box can't be configured the same.   We actually have a headless Sun box
as the management console, and the GUI is run from a single workstation
who's IP has been set specifically with permissions.
