Ouch. If probe-scsi doesn't see the disk, there might be a target id
conflict. In such a case it's dangerous to access any of the two disks...
However when I reboot

Sure. Boot is done by the OpenPROM, the same device that doesn't see your
disk :-(
I've tried this install 4 times today and

probe-scsi output has nothing to do with disk labels, it's working on an
entirely different level
First make sure that your disks appear at different scsi id addresses.
