Dear Ian,
  Check out your /etc/sendmail.cf (sendmail configuration file), specially 
DR and CR sections. These sections specify relay hosts (hosts that will be used
to send mail to other domains). For more info on how to configure sendmail.cf, 
see http://www.sendmail.org.
