You don't even need to fool around with netatalk on Linux to support the
Mac. MacOS 8.5 and higher includes a program called the "Desktop Printer
Utility" (or something like that) which can connect to LPR printers.

The hard part is the $500 budget. It would be much easier to set up if you
have a PostScript printer. Though I suppose Ghostscript might fix that.

If you want a color inkjet, look into the Epson Stylus 900 series. There's
a Postscript upgrade available. And it seems to be fairly inexpensive.
