The key will be whether you can get the touchscreen working under XOrg.
the ELO driver may or may not work. There is a site that claims they've
written drivers for every touchscreen for windows and linux (and
possibly other OSes too) but they're not cheap.
I've got a touchsystem that was in that boat. I could pay for their
driver to use it under linux or I could run windows on the thing and use
the manufacturer's official driver.
As far as mounting goes, what I did was just stick it on the wall with a
swing-mount for a smallish LCD TV.
