Had you been considering x86, there are plenty of laptops out there that
allow dual harddrives.
 
I wonder if anyone makes a cPCI based luggable system that could be
used.

looks cool, but I don't have any idea what it would take to make one
work nicely with a Sun CP1500.  Also, I suspect that one would have to
watch ebay for a long time to find one that is affordable.
