Well, you can still by MacIvory II setups from Symbolics.
After that, OS X is a very hot platform for lisp development. The next
most popular seems to be Linux. On OS X, lisp implementations seem to
be a toss-up between SBCL and OpenMCL, but on linux SBCL seems to be the
nicest choice.
