CCDs used for astronomical imaging are usually cooled with multi-stage
peltier modules or liquid nitrogen to reduce noise.. They avoid the
condensation problem by mounting the assembly in an evacuated chamber
with a "cold finger" (ahem) in contact with the CCD substrate to suck
the heat out.
