You need as much capacity as the UPS will draw.  A good guesstimate is
1.5x the VA capacity of the UPS (so play on 1500VA for a 1000VA UPS).
This gives enough overhead for both charging and full load operation.

120/240 transformers should be cheap.  HSC in Rohnert Park, CA had a pile
of 2000VA ones for $20/ea last I checked.  Of course, tapping into real
240V is preferable.
