  3100 RAM is easier to find than 5000/2xx RAM, but still not very
easy to find.  Your best bet is to ask people around here.  I know
Sridhar has a metric buttload of 5000/2xx RAM (something like eight
5000/260 machines each with 448MB or something obscene like that) and
maybe Brian Hechinger does.  I have some somewhere, but I've no idea
where.  I have a box of 2MB 2100/3100 SIMMs here, though.
