Sendmail isn't as tough to setup as the bat book would imply --- pretty 
much everything can be done in the "mc" file (a macro file which is 
used to generate the "cf" file). If you're looking for something 
easier, then I can't answer for qmail, but exim is pretty easy to get 
going and comes with an excellant manual.
