Windows' file locking breaks this.  In fact, it tends to break
anything done with *nix utilities unless they have a Windows-specific
client of some sort that is aware of and uses Shadow Copy.

If you do this, it'll back up files that aren't currently in use, but
you'll find certain files are in use all the time, even if they aren't
part of the OS and they're something you really do want to back up,
even if you don't care about "bare metal restore".

Outlook data files come to mind, though they aren't the only affected
files.
