Yup, I looked at McMaster-Carr but found only one or two knobs that
looked as though they MIGHT fit and that I could be sure would handle
the temperature. Most of the few knobs that are the correct shaft size
and fitting are only rated to 2100F, and this is a steam valve that can
hit about 250-2600F.
The more I look at this, by the way, the more sure I am that it's a
nominal 6mm shaft.
