I am about to start working on an annoying issue that has to do with a
streaming appliance (Roku) and poor performance with particular streaming
media type (most channels work fine, one or two constantly re-buffers). What I
think is a reasonable first step is to monitor/analyze the network traffic
flowing into/out of my Roku - I am in need of a pointer to appropriate
software.

What I would like is to be able to:

monitor all traffic in/out for a particular IP address

Store the traffic for off-line analysis

Ideally, be capable of presenting the traffic in some sort of 'readable' form,
sort of like an intelligent disassembler

And, of course, free is best, 30 day free trial is good, but anything that
costs over, say $20 is right out.

The problem is the live stream to the Roku is nearly unwatchable, yet the same
box can easily stream stored content without issue from the same
provider/channel.

In reality, I think I'll need the same toolset that was used to 'prove'
Comcast & other ISPs were throttling BitTorrent traffic a few years ago.
