I wonder what SATA controller is in the Mac Mini - you could run a cable out of the chassis from the internal SATA port to a dremel'd out eSATA port...

ALso, for those interested in awfully tiny desktops machines, Dell has a new machine called the "Dell Studio Hybrid"[0], it has FireWire and USB 2.0, but no eSATA...
