Yes, in most cases.

They are embedded Linux machines, and the Galaxy and the Hammer use  
extN filesystems.

Take the drives out and put them in a generic Linux box and mount them  
as a mirror or whatever you configured and that should be it.

Just make sure when you get one, that they use an open OS and a common  
filesystem and RAID software.
