Or get a digital voice recorder and convert to mp3 after the fact.  From 
a brief google, it looks like the Olympus voice recorders store in WMA 
format, which could be converted to mp3 (yes, transcoding, but it's 
voice, not music, so it should not be that big of a deal).

There's also the MacXtreme MicroMemo digital voice recorder that 
connects to via the iPod dock connector.  42 reviews at Apple @3.5/5 
stars.  Looks like it's only compatible with "full size" ipods, though. 
  It records to WAV. Bonus: use whatever mic you want with a 3.5mm plug.
