Ultima, especially Ultima III and later.

The NES port of Ultima III by Pony Canyon / FCI and the dialogue system
changes in Ultima VII illustrate the necessary UI changes needed to make
it work on a handheld or other keyboardless device.

The NES game "Shadowgate" (wasn't it released for a more capable
platform, too?) is another excellent CRPG that would translate well to a
handheld.

A tile-based Nethack wouldn't be horrible, either.

Commander Keen would make for a neat platformer, too.
