Well, I'd be shocked if gnuplot couldn't do what I need.  I just can't
find docs to say how.

So, here is the simple version of what I need.

I have a file along the lines of:
x y
0.0 0.0
1.0 1.0
2.0 0.0

I need that to give me a graph like:
y
^
|    ^
|   / \
|  /   \
| /     \
|/       \
------------>x

Now, my files are small, so reformatting them would be no big deal.
My goal is to avoid drawing the graph by hand in illustrator, but the
whole thing is going to be assembled there.
