To save on original work you could just whack up an ADB keyboard, and
put it in an attractive waterproof membrane button box with only the
buttons needed, and you could still daisychain more ADB stuff if needed
fopr setup, etc.

There was also a company once that made a monitor platform which made
every monitor touch screen capable.  It actually used strain gauge
blocks to calculate where on the front of the monitor you touched, and
in fact worked as well with a cinderblock as it did with a monitor.  If
one of those could be discovered, you could set up a one piece Mac, with
a board with buttons painted on it firmly attached to the side, and not
have to worry about ingredients damaging your buttons.
